Makes enough for 10 people

For the Clementine Cordial (produces 750ml)

300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g caster sugar

Ingredients for the Cocktail (makes 850ml, enough for 10)

400ml decent vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml citrus syrup (as made above)
Fresh cranberries, for garnish
Mandarin essential oil, to finish

Instructions

Making the Citrus Syrup: Combine the listed ingredients into a pan, bring to a simmer, stirring to dissolve. After that, remove from the stove and leave to cool completely. Transfer to a sealable bottle, seal and store in the fridge, it will last for around four weeks.

Preparing the Premix: Mix the specified liquids into one big jug, let it rest for an hour, then filter it , ideally through muslin, so it's completely strained.

To serve: Measure 85ml of your cocktail base into a mixing glass filled with ice, gently stirring carefully for one minute to chill. Strain into a chilled martini glass or equivalent, garnish with the cranberries and complete it by giving it a brief mist with the mandarin essence over the top.
